I knew that I wanted quinoa for dinner tonight, but the dilemma was, what did I want in it? I dug through the fridge and found that I had onions, garlic, sun-dried tomatoes, feta cheese, spinach, and chicken. I threw them all together and voila, it was delicious!
Ingredients:
2 cups quinoa
4 cups chicken broth
1 chicken breast cut into small chunks
1 onion chopped
1 clove garlic minced
6 pieces of sun dried tomatoes in oil finely chopped
2 cups raw spinach julienned
1 cup of feta cheese
1 tbsp olive oil
Directions:
Heat the oil in a pan and sauté the onions, garlic, and sun dried tomatoes for 2-3 minutes. Add the chicken pieces and sauté for another 3-4 minutes. Add the chicken broth and bring to a boil. Add quinoa and let simmer until all the liquid is absorbed.
You can serve this dish hot or cold. Right before serving, add the spinach and feta cheese and toss to serve. If you make this dish, I would love to hear if you liked it!
