I love making stuffed bell peppers, but I don’t like how long it takes to make them. Having to boil the bell peppers and then baking them takes too long for this busy mom when dinner needs to be on the table in under 30 minutes.
So, I take my stuffed bell pepper recipe and add more bell peppers to it and create a casserole by cooking everything on the stove. It’s delicious!
Ingredients:
1 pound lean ground turkey
1 teaspoon olive oil
1 cup diced onion
1 1/2 cups diced bell peppers
1 clove garlic minced
2 cups cooked rice
1 14 ounce can tomato sauce
1/2 teaspoon Lawry’s Garlic Salt
1 cup parmesan cheese
Directions:
Add oil to a hot pan. Saute the onions, garlic, and bell peppers together until softened. Remove from pan and set aside. Brown the ground turkey. Add the onions and bell pepper back to the pan. Add the cooked rice and stir mixture together. Add tomato sauce and combine. Set stove on low and let simmer for 5 minutes. Add cheese – stir to melt. If you have time, you can always add a tad more cheese and brown it under the broiler. Bon appetit!
